| DOUBLE CHOC MUFFINS |

100g/4oz Caster Sugar
100g/4oz Soft Margarine
2 Eggs (lightly beaten)
75g/3oz Barkat Flour Mix
25g/1oz Cocoa Powder
25g/1oz Plain Chocolate Chips or Drops
For Finishing
100g/4oz Melted Chocolate (Plain or Milk)
25g/1oz White Chocolate Chips or Drops

1. Sieve together Barkat Flour Mix and cocoa powder.
2. Cream margarine and sugar until light and fluffy.
3. Gradually beat in the eggs, adding a little of the flour and cocoa mix each time to
prevent curdling.
4. Fold in the remaining Barkat Flour Mix and cocoa.
5. Mix in the chocolate chips.
6. Divide the mixture equally into 12 Fairy or Muffin cases.
7. Bake in the top of an oven set at gas mark 6, 400f or 200c for 10-12 minutes.
8. Cool on a wire rack.
9. When cold, dip into chocolate and decorate with chocolate chips.
